Tub Tim Grob (Red Rubies in Coconut Milk)

1 cup Water Chestnuts, Cut Into Small Cubes
½ cup Tapioca Flour
Red Food Coloring
2 cups Coconut Milk
½ cup Sugar
½ tsp. Salt
Crushed Ice

Soak the cubed water chestnuts in water with a few drops of red food coloring for about 15 minutes. Drain and then coat the water chestnuts in the tapioca flour.

Bring a pot of water to a boil. Drop in the coated water chestnuts and boil until they float to the surface. Remove them with a slotted spoon and drop them into a bowl of cold water.

In a saucepan, heat the coconut milk, sugar, and salt over medium heat until the sugar is dissolved.

To serve, place a scoop of the "red rubies" (coated water chestnuts) in a bowl, top with the sweet coconut milk, and add some crushed ice. Stir before eating to mix all the flavors together.
