Khanom Buang (Thai Crepes)

1 cup Rice Flour
½ cup Tapioca Flour
2 cups Coconut Milk
2 Eggs
½ cup Sugar
¼ cup Sweetened Condensed Milk
Filling Of Your Choice (commonly A Mixture Of Shredded Coconut And Egg Yolks For Sweet Or Minced Shrimp For Savory)
Mix together the rice flour, tapioca flour, coconut milk, eggs, and sugar to make the crepe batter.
Heat a non-stick pan over medium heat. Pour a small amount of the batter into the pan and spread it into a thin, round shape.
Cook the crepe until it's crispy and golden brown.
Spread a small amount of sweetened condensed milk on the crepe, then add your chosen filling.
Fold the crepe in half and remove it from the pan.
Repeat this process for the remaining batter and filling.
