Thai, Dessert Vegetarian Lactose Free Nut Free, Rice Flour

Bua Loy (Rice Balls in Coconut Milk)

Ingredients

Method

1 cup Glutinous (Sticky) Rice Flour
½ cup Water
Food Coloring (optional)
2 cups Coconut Milk
½ cup Sugar
½ tsp. Salt

Mix together the rice flour and water to form a dough. Divide the dough and add food coloring if you want different colored rice balls.

Roll the dough into small balls, about the size of a marble.

Bring a pot of water to a boil. Drop the rice balls into the boiling water and cook until they float to the surface.

In a separate saucepan, heat the coconut milk, sugar, and salt over medium heat until the sugar is dissolved.

Add the cooked rice balls to the coconut milk sauce and simmer for a few minutes.

Serve the Bua Loy hot, ideally in small bowls with a spoon.
