Khao Niew Dam (Black Sticky Rice)

1 cup Black Glutinous Rice
2 cups Water
1 cup Coconut Milk
½ cup Sugar
¼ tsp. Salt
Sliced Mango Or Other Fresh Fruit For Serving (optional)

Rinse the black sticky rice under cold water until the water runs clear. Then soak the rice in enough water to cover for at least 4 hours or overnight.

Drain the rice and place it in a saucepan with the 2 cups of water. Bring to a boil, then reduce the heat to low and simmer, covered, for about 20 minutes, or until the rice is tender and the water is absorbed.

In a separate saucepan, heat the coconut milk, sugar, and salt over medium heat until the sugar is dissolved.

Serve the cooked black sticky rice in bowls, topped with the sweet coconut milk sauce and slices of fresh fruit, if desired.
