Khao Tom (Rice Soup)

1 cup Jasmine Rice
6 cups Chicken Broth
1 Chicken Breast, Cut Into Thin Strips
2 tbsp. Fish Sauce
1 tbsp. Soy Sauce
2 Spring Onions, Chopped
2 Garlic Cloves, Minced
1 tbsp. Fresh Cilantro, Chopped,or spring onions  For Garnish
1 tsp. Ground White Pepper, For Garnish

Rinse the jasmine rice under cold water until the water runs clear.

In a large pot, bring the chicken broth to a boil. Add the rinsed rice and cook until the rice is soft and the soup has a porridge-like consistency.

Add the chicken strips, fish sauce, soy sauce, chopped spring onions, and minced garlic to the pot. Simmer until the chicken is cooked through.

Ladle the soup into bowls and garnish with fresh chopped cilantro or spring onions and a sprinkle of ground white pepper.
