Hoy Tod (Oyster Pancake)

1 cu Rice Flour
½ cu All-Purpose Flour
1½ cu Water
2 Eggs
1 cu Fresh Oysters
2 cu Bean Sprouts
2 tbsp Vegetable Oil
2 tbsp Fish Sauce, For Serving
2 tbsp Sriracha Sauce, For Serving

Mix together the rice flour, all-purpose flour, and water to make a batter.

Heat a non-stick pan over medium heat and add the vegetable oil.

Pour a small amount of the batter into the pan and spread it into a thin, round shape. Cook until it's crispy and golden brown.

Crack an egg onto the pancake and spread it around with a spatula. Add a quarter of the oysters and bean sprouts on top.

Flip the pancake and cook until the other side is also crispy and golden brown.

Repeat this process for the remaining batter, eggs, oysters, and bean sprouts.

Serve the oyster pancakes hot, with fish sauce and Sriracha sauce on the side for dipping.
