Moo Dat Diew (Sun-dried Pork)

1 lb. Pork Loin, Cut Into Thin Strips
¼ cup Soy Sauce
2 tbsp. Fish Sauce
2 tbsp. Palm Sugar
2 Garlic Cloves, Minced
½ tsp. White Pepper

In a bowl, mix together the soy sauce, fish sauce, palm sugar, minced garlic, and white pepper to make a marinade.

Add the pork strips to the marinade and mix well to ensure they are fully coated. Leave to marinate for at least 2 hours or preferably overnight.

Arrange the marinated pork strips on a rack and leave to dry in the sun for a full day. If you cannot dry them in the sun, you can also dry them in an oven set to a low temperature.

Once the pork strips are dry, they can be fried or grilled until they are crispy and cooked through.

Serve the sun-dried pork as a snack or as part of a meal.
