Sai Oua (Northern Thai Sausage)

1 lb. Ground Pork
1 tbsp. Red Curry Paste
1 tbsp. Lemongrass, Finely Chopped
1 tsp. Kaffir Lime Leaves, Finely Chopped
1 tsp. Galangal, Finely Chopped
1 tsp. Turmeric
2 tbsp. Fish Sauce
2 Garlic Cloves, Minced
1 tsp. Sugar
Sausage Casings
In a bowl, mix together the ground pork, red curry paste, finely chopped lemongrass, kaffir lime leaves, galangal, turmeric, fish sauce, minced garlic, and sugar.
Rinse the sausage casings in warm water and keep them in a bowl of warm water until you're ready to use them.
Use a sausage stuffer to stuff the pork mixture into the sausage casings. Twist the sausages into links.
Grill the sausages over medium heat until they are cooked through, about 15-20 minutes.
Serve the Sai Oua hot, ideally with sticky rice and fresh vegetables.
