Pad Phrik Khing (Stir-fry with Red Curry Paste)

1 lb. Pork, Thinly Sliced
2 tbsp. Red Curry Paste
1 cup Green Beans, Trimmed And Cut Into 2-Inch Pieces
2 tbsp. Fish Sauce
1 tsp. Sugar
2 Kaffir Lime Leaves, Finely Chopped
1 tbsp. Vegetable Oil

Heat the vegetable oil in a wok or large frying pan over medium heat.

Add the red curry paste and stir-fry for a minute until it's fragrant.

Add the thinly sliced pork to the wok and stir-fry until it's cooked through.

Add the green beans, fish sauce, sugar, and chopped kaffir lime leaves to the wok. Stir-fry for a few more minutes until the beans are cooked but still crunchy.

Serve the Pad Phrik Khing hot, ideally with jasmine rice.
