Hor Mok (Steamed Fish Curry)

1 lb. White Fish Fillets, Cut Into Small Pieces
2 tbsp. Red Curry Paste
1 cup Coconut Milk
2 Eggs
1 tbsp. Fish Sauce
1 tsp. Sugar
4 Kaffir Lime Leaves, Finely Chopped
4 Banana Leaves, For Wrapping
In a blender, blend together the fish fillets, red curry paste, coconut milk, eggs, fish sauce, and sugar until smooth.
Stir in the finely chopped kaffir lime leaves.
Cut the banana leaves into circles and use them to line small bowls or ramekins.
Pour the fish curry mixture into the banana leaf-lined bowls.
Steam the bowls over high heat for about 20 minutes, or until the fish curry is set.
Serve the Hor Mok hot, in the banana leaf bowls.
