Gaeng Kari Gai (Yellow Curry with Chicken)

1 lb. Chicken Breast, Cut Into Bite-Sized Pieces
2 tbsp. Yellow Curry Paste
2 cups Coconut Milk
2 Potatoes, Peeled And Diced
1 tbsp. Fish Sauce
1 tbsp. Sugar
1 tbsp. Fresh Cilantro, For Garnish

In a large pot, heat the yellow curry paste over medium heat until it becomes fragrant.

Add the chicken to the pot and cook until it's browned on all sides.

Add the coconut milk, potatoes, fish sauce, and sugar to the pot. Simmer until the potatoes are tender and the chicken is cooked through.

Serve the Yellow Curry with Chicken hot, garnished with fresh cilantro.
