Pla Goong (Spicy Shrimp Salad)

1 lb Shrimp, Peeled And Deveined
2 tbsp Lime Juice
1 tbsp Fish Sauce
1 tsp Sugar
2 Bird's Eye Chilies, Sliced
1 Lemongrass Stalk, Thinly Sliced
1 Shallot, Thinly Sliced
¼ cu Fresh Mint Leaves, For Garnish
1 Fresh Lettuce, For Serving

Boil the shrimp in a pot of water until they're cooked through. Drain and set aside.

In a bowl, mix together the lime juice, fish sauce, sugar, bird's eye chilies, lemongrass, and shallot.

Add the cooked shrimp to the bowl. Toss until everything is well coated in the dressing.

Serve the Spicy Shrimp Salad on a bed of fresh lettuce, garnished with fresh mint leaves.
