Moo Satay (Pork Satay)

1 lb. Pork, Cut Into Thin Strips
¼ cup Soy Sauce
¼ cup Coconut Milk
2 tbsp. Brown Sugar
1 tbsp. Curry Powder
1 tbsp. Vegetable Oil
Bamboo Skewers, Soaked In Water For 30 Minutes
½ oz. Peanut Butter
¼ cup Coconut Milk
2 tbsp. Lime Juice
1 tbsp. Soy Sauce
1 tbsp. Brown Sugar
1 Garlic Clove, Minced
¼ tsp. Red Pepper Flakes

In a bowl, mix together the soy sauce, coconut milk, brown sugar, curry powder, and vegetable oil.

Add the pork strips to the bowl and toss until they're well coated in the marinade. Let them marinate for at least 2 hours, or overnight.

Preheat a grill or grill pan to medium heat.

Thread the marinated pork strips onto the bamboo skewers.

Grill the pork skewers for about 3 minutes on each side, or until they're cooked through.

For the peanut sauce, whisk together the peanut butter, coconut milk, lime juice, soy sauce, brown sugar, garlic, and red pepper flakes until smooth.

Serve the Pork Satay hot, with the peanut sauce on the side for dipping.
