500 g Potatoes (boiled And Mashed)
              2 g Mustard Seeds
              1 g Asafoetida
              10 g Ginger (grated)
              2 Green Chillies (finely Chopped)
              5 g Turmeric Powder
              ¼ tsp Salt To Taste
              200 g Gram Flour (besan)
              2 g Turmeric Powder
              2 g Red Chili Powder
              ¼ tsp Salt To Taste
              200 ml Water
              ½ l Oil For Deep Frying
              4 Pav Buns
              Green Chutney As Needed
              Tamarind Chutney As Needed
          Heat oil in a pan, add mustard seeds, asafoetida, ginger, green chillies, and turmeric. Add mashed potatoes and salt. Mix well and let it cool.
Divide the potato mixture into equal portions and shape into patties.
In a bowl, mix gram flour, turmeric, chili powder, salt, and water to make a thick batter.
Dip the potato patties in the batter and deep-fry in hot oil until golden. Drain on kitchen paper.
Slice the pav buns horizontally, spread green chutney on one side and tamarind chutney on the other. Place a vada in between.
Repeat with the remaining buns and vadas. Serve hot.
