Traditional Christmas Mince Pies

200 g. Plain flour
50 g. Sugar
125 g. Cold butter
400 g. Mincemeat
1 Apple, finely chopped
50 g. Raisins
50 g. Mixed peel
50 g. Cranberries
Zest of 1 orange
1 tsp. Mixed spice
1 tbsp. Brandy
Icing sugar, for dusting

Rub together the flour, sugar, and cold butter until they form fine breadcrumbs. Press together firmly and refrigerate for half an hour.

Preheat your oven to 200°C/400°F.

In a separate bowl, blend the mincemeat, chopped apple, raisins, mixed peel, cranberries, orange zest, mixed spice, and brandy.

Roll out the chilled pastry on a lightly floured surface. Using a round cutter, cut out circles and press them into a greased muffin tin.

Fill each pastry with a spoonful of the mincemeat mixture.

From the remaining pastry, cut out stars, or lids if you prefer, and place them on top of the filled pies.

Bake in the preheated oven for about 15-20 minutes, or until they are golden brown.

Let them cool in the tray before removing. Dust with icing sugar before serving. Enjoy these Traditional Christmas Mince Pies warm or cold, either way, they are delicious!
