Aloo Gobi

200 g. Potatoes (cut Into Cubes)
200 g. Cauliflower (cut Into Florets)
1 Onion (finely Chopped)
2 Tomatoes (pureed)
2 tsp. Ginger (grated)
2 tsp. Garlic (minced)
½ tsp. Turmeric Powder
½ tsp. Red Chili Powder
1 tsp. Coriander Powder
1 tsp. Cumin Seeds
½ tsp. Salt To Taste
30 ml. Vegetable Oil
5 g. Fresh Coriander For Garnish
Heat oil in a pan, add cumin seeds and let them splutter.
Add onions, ginger, and garlic, and cook until onions are golden.
Add tomato puree, turmeric, chili powder, and coriander powder. Cook until oil separates.
Add potatoes, cauliflower, and salt. Stir well to coat the vegetables with the spices.
Cover and cook on low heat until the vegetables are tender.
Garnish with fresh coriander before serving.
