Jalebi

200 g. All-purpose Flour
5 g. Yoghurt
2 g. Baking Soda
200 ml. Water
Yellow Food Colouring (a Few Drops)
Vegetable Oil For Frying
250 g. Sugar
200 ml. Water
2 g. Saffron Strands
5 g. Lemon Juice
Mix the flour, yogurt, baking soda, water, and food color to make a thick batter. Let it ferment for 8-10 hours.
For the syrup, mix sugar, water, saffron, and lemon juice in a pan. Simmer until the syrup becomes one-thread consistency.
Heat oil in a pan. Fill a piping bag with the batter and pipe it in a spiral shape directly into the hot oil. Fry the jalebis until golden and crisp.
Drain the jalebis and immediately drop them into the warm syrup. Let them soak for 2-3 minutes, then remove and drain on a wire rack.
Serve the jalebis warm or at room temperature.
