Clam Chowder

Serves 4

Ingredients

Method

2 Cans Clams (Reserve Juice)
1 cup Onion (chopped)
1 cup Celery (chopped)
2 cups Potatoes (diced)
¾ cup Butter
¾ cup All-Purpose Flour
1 qt. Half-and-Half Cream
1½ tsp. Salt
½ tsp. Black Pepper

In a large pot, sauté onion and celery in butter until soft.

Stir in flour, salt, and pepper; gradually add half-and-half cream, stirring constantly.

Cook and stir 1-2 minutes or until thickened.

Add clams, potatoes, and reserved clam juice; heat through. Sprinkle some herbs over to serve. (optional)
