Thanksgiving Turkey

12 lb. Turkey
¾ cup Butter (softened)
1½ tsp. Salt
1 tsp. Black Pepper
Bunch of Fresh Thyme
Bunch of Fresh Rosemary
Bunch of Fresh Sage
1 Onion (quartered)
1 Lemon (quartered)
1 Garlic Bulb (halved)
Preheat your oven to 325°F (165°C).
Remove the neck and giblets from the turkey and rinse the turkey inside and out with cold water. Pat dry with paper towels.
Rub the turkey all over with the softened butter, then season it inside and out with the salt and pepper.
Stuff the turkey cavity with the thyme, rosemary, sage, onion, lemon, and garlic.
Place the turkey, breast side up, on a rack in a roasting pan.
Roast the turkey in the preheated oven for about 3 hours, or until the internal temperature of the thickest part of the thigh reaches 165°F (74°C). Baste the turkey occasionally with the juices from the pan.
Remove the turkey from the oven and let it rest for 20 minutes before carving.
