Shrimp and Grits

2 cups Water
2 cups Milk
1 tsp. Salt
1 cup Corn Grits
¼ cup Unsalted Butter
½ cup Cheddar Cheese (grated)
1 lb. Shrimp (peeled And Deveined)
½ tsp. Salt
¼ tsp. Black Pepper
¼ tsp. Cajun Seasoning
2 tbsp. Olive Oil
2 Garlic Cloves (minced)
½ cup Chicken Broth
2 Green Onions (chopped)
½ Lemon (juiced)

For the grits, bring the water, milk, and salt to a boil in a saucepan. Gradually whisk in the grits, then reduce the heat to low and cover the pan. Cook for about 20 minutes, stirring occasionally, until the grits are creamy. Stir in the butter and cheese until melted.

For the shrimp, season the shrimp with the salt, pepper, and Cajun seasoning. Heat the olive oil in a frying pan over medium-high heat. Add the shrimp and cook for about 2 minutes per side, until they are pink. Remove the shrimp from the pan and set them aside.

In the same pan, sauté the garlic for about 1 minute, until fragrant. Add the chicken broth and bring to a simmer. Cook for about 5 minutes, until the broth is reduced by half.

Return the shrimp to the pan and stir in the green onions and lemon juice.

To serve, spoon the grits onto plates and top with the shrimp and sauce.
