Nanaimo Bars

½ cup Unsalted Butter (melted)
¼ cup Sugar
5 tbsp. Unsweetened Cocoa Powder
1 Egg (beaten)
1¾ cups Graham Cracker Crumbs
1 cup Shredded Coconut
½ cup Almonds (finely Chopped)
½ cup Unsalted Butter (softened)
2 tbsp. Vanilla Custard Powder
2 tbsp. Milk
2 cups Powdered Sugar
4 oz. Semi-Sweet Chocolate (chopped)
2 tbsp. Unsalted Butter
For the base, mix the butter, sugar, and cocoa powder in a bowl. Stir in the beaten egg. Add the graham cracker crumbs, coconut, and almonds. Press the mixture into the bottom of a 9-inch square pan. Refrigerate until firm.
For the middle layer, beat the butter, custard powder, and milk in a bowl until creamy. Gradually beat in the powdered sugar until smooth. Spread over the base in the pan. Refrigerate until firm.
For the top layer, melt the chocolate and butter in a heatproof bowl over a pan of simmering water. Spread over the middle layer in the pan. Refrigerate until set.
Cut the Nanaimo Bars into squares before serving.
