Split Pea Soup

Ingredients

Method

1 lb. Dried Split Peas
1 Ham Bone Or 2 Ham Hocks
2 Carrots (chopped)
1 Onion (chopped)
2 Celery Stalks (chopped)
2 Garlic Cloves (minced)
1 tsp. Salt
½ tsp. Black Pepper
6 cups Water

Rinse the split peas under cold water.

In a large pot, combine the split peas, ham bone or hocks, carrots, onion, celery, garlic, salt, pepper, and water.

Bring the soup to a boil over medium-high heat. Reduce the heat to low, cover the pot, and simmer for about 1 hour, until the peas are tender.

Remove the ham bone or hocks from the soup. When cool enough to handle, remove any meat from the bones, chop it, and return it to the soup. Discard the bones.

If desired, puree part or all of the soup with a blender or immersion blender for a smoother texture. Adjust the seasonings to taste before serving.Garnish with some herbs. (Optional)
