Saskatoon Berry Pie

5 cups Saskatoon Berries
¾ cup Sugar
¼ cup All-Purpose Flour
1 tbsp. Lemon Juice
1 Double Pie Crust
1 Egg (beaten)
Preheat your oven to 425°F (220°C).
In a large bowl, mix the Saskatoon berries, sugar, flour, and lemon juice.
Roll out half of the pie crust to fit a 9-inch pie plate. Spoon the Saskatoon berry filling into the pastry.
Roll out the other half of the pie crust and place it over the filling. Seal and crimp the edges. Cut slits in the top of the pie to allow steam to escape.
Brush the top of the pie with the beaten egg.
Bake the pie for about 40-45 minutes, or until the crust is golden and the filling is bubbly. If the edges of the pie are browning too quickly, cover them with aluminum foil.
Allow the pie to cool before cutting and serving.
