8 Small Flour Tortillas
½ kg. Cheese (like Cheddar Or Monterey Jack), Shredded
1 Bell Pepper, Diced
1 Onion, Diced
Vegetable Oil For Frying
Salt To Taste
Pepper To Taste
Sauté bell pepper and onion until softened. Season with salt and pepper.
Lay out 4 tortillas and evenly spread the cheese and sautéed vegetables over each one. Top with another tortilla.
Heat a small amount of oil in a pan over medium heat. Add the quesadilla and cook until the cheese has melted and the tortillas are golden brown, about 2-3 minutes on each side.
