Huevos Rancheros

4 Small Tortillas
4 Eggs
2 Tomatoes, Chopped
1 Onion, Chopped
2 Jalapeno Peppers, Chopped
2 Garlic Cloves, Minced
Salt To Taste
Pepper To Taste
Vegetable Oil For Frying
Sauté the onion, garlic, and jalapeno until softened. Add the chopped tomatoes and simmer until a sauce forms. Season with salt and pepper.
In a separate pan, fry the tortillas until golden, then drain on kitchen paper. Fry the eggs until the whites are set but the yolks are still runny.
Place a tortilla on each plate, top with a fried egg, and pour the sauce over the top.
