Flan

200 g. Sugar
5 Large Eggs
500 ml. Whole Milk
1 tsp. Vanilla Extract
Preheat oven to 160 degrees Celsius. In a saucepan, melt the sugar over medium heat until it becomes a golden caramel. Pour this quickly into a round cake pan, swirling to coat the bottom.
In a large bowl, whisk together eggs, milk, and vanilla. Pour this over the caramel in the cake pan.
Place the cake pan in a larger baking dish and add enough boiling water to the baking dish to come halfway up the sides of the cake pan.
Bake for about 60 minutes, or until set in the middle. Cool completely, then refrigerate for at least 2 hours.
To serve, run a knife around the edge of the flan, then invert onto a plate. The caramel sauce will pour over the custard.
