Al Pastor Tacos

½ kg. Pork Shoulder, Sliced Into Thin Strips
4 Dried Guajillo Chilies
1 Onion, Chopped
2 Garlic Cloves, Minced
Juice of 2 Oranges
2 Juice of 2 Limes
1 tsp. Cumin
1 tsp. Oregano
Salt To Taste
Pepper To Taste
8 Small Tortillas
1 Pineapple, Peeled And Chopped

Soak the dried chilies in hot water until soft, then drain and remove the stems and seeds.

Blend the softened chilies, onion, garlic, orange juice, lime juice, cumin, oregano, salt, and pepper to create a marinade.

Marinate the pork in the mixture for at least 4 hours, or overnight.

Grill the pork and pineapple until cooked through and slightly charred.

Serve on tortillas with extra pineapple and other desired toppings.
