4 Bread Rolls
4 Dried Guajillo Chilies
1 Onion, Chopped
2 Garlic Cloves, Minced
½ kg. Chorizo Sausage, Crumbled
½ kg. Potatoes, Peeled And Diced
Salt To Taste
Vegetable Oil For Frying
Lettuce, Sour Cream, and Cheese For Topping
Soak the dried chilies in hot water until soft, then drain and remove the stems and seeds. Blend the softened chilies with a bit of water to create a paste.
Sauté the onion and garlic until softened. Add the crumbled chorizo and diced potatoes, and cook until the potatoes are tender. Season with salt.
Dip each bread roll in the chili paste and fry in a pan with a bit of oil until crisp.
Slice each roll open and fill with the chorizo and potato mixture. Top with lettuce, sour cream, and cheese.
