Central American, Side Dish Gluten Free Lactose Free, Beans (Red Kidney Beans, Jar or Tin) Long Grain Rice

Rice and Beans

Method

250 g Dried Red Kidney Beans
1½ L Water
½ L Coconut Milk
2  Garlic Cloves, Minced
1  Onion, Diced
1 tsp Dried Thyme
Salt To Taste
500 g Long Grain White Rice

Soak the beans in water overnight. Drain and rinse.

In a large pot, combine the beans, water, coconut milk, garlic, onion, thyme, and salt. Bring to a boil, then reduce the heat and simmer until the beans are tender, about 1-2 hours.

Rinse the rice under cold water until the water runs clear. Add the rice to the pot with the beans. Return to a boil, then reduce the heat to low, cover, and simmer until the rice is tender and the liquid is absorbed, about 20 minutes.

Fluff the rice with a fork before serving.
