Fry Jacks

500 g. All-purpose Flour
1 tsp. Baking Powder
½ tsp. Salt
60 g. Shortening
250 ml. Water
Vegetable Oil For Frying

In a large bowl, combine the flour, baking powder, and salt. Cut in the shortening until the mixture resembles coarse crumbs.

Gradually add the water, mixing until a dough forms.

Turn the dough out onto a floured surface and knead until smooth. Let the dough rest for about 10 minutes.

Divide the dough into balls, then roll out each ball into a thin circle. Cut each circle into quarters.

5. Heat the vegetable oil in a deep pan over medium-high heat. Fry the dough pieces until puffed and golden brown, about 1-2 minutes per side.

Drain the fry jacks on kitchen paper and serve warm. They can be served with jam, honey, or as a savory dish with beans and eggs.
