Pupusas

500 g Masa Harina (Corn Flour)
1 L Water
1 tsp Salt
200 g Grated Cheese (quesillo, Mozzarella, Or A Similar Cheese)
200 g Refried Beans
200 g Chicharrón (fried Pork Belly Or Fried Bacon), Finely Chopped

In a large bowl, combine the masa harina, water, and salt. Mix well to form a dough.

Take a portion of the dough and make a well in the center. Fill the well with a bit of the cheese, beans, and chicharrón. Fold the dough over to completely enclose the filling. Shape the dough into a disc, taking care not to let the filling spill out.

Preheat a griddle or frying pan over medium heat. Cook the pupusas for 2-3 minutes on each side, or until golden brown.

Serve the pupusas with curtido (cabbage slaw) and tomato salsa.
