Tamales de Elote

8 Fresh Sweet Corn Cobs, Kernels Removed
              120 g Butter, Softened
              200 g Sugar
              1 tsp Salt
              250 ml Sour Cream
              Banana Leaves for Wrapping
          Place the corn kernels in a blender or food processor. Process until smooth.
In a large bowl, beat the butter, sugar, and salt together until creamy. Add the corn puree and sour cream and mix well.
Rinse the banana leaves and pat them dry. Cut them into large squares.
Assemble the tamales by placing a scoop of the corn mixture in the center of each banana leaf square. Fold the banana leaf over the filling, then tie with kitchen string.
Place the wrapped tamales in a steamer and steam for about 1 hour, or until the dough is firm and fully cooked. Let them cool slightly before unwrapping and serving. Enjoy these sweet tamales as a dessert or a sweet snack.
