Indio Viejo

500 g. Beef, Cooked And Shredded
2 Onions, Finely Chopped
2 Bell Peppers, Finely Chopped
4 Tomatoes, Finely Chopped
3 Garlic Cloves, Minced
Salt And Black Pepper To Taste
2 tsp. Ground Cumin
1 tsp. Ground Coriander
½ tsp. Ground Turmeric
1 l. Beef Broth
100 g. Masa Harina (Corn Flour)
Fresh Cilantro, Chopped, For Garnish

In a large pot, cook the onions, bell peppers, tomatoes, and garlic until the vegetables are softened.

Add the shredded beef to the pot, along with the salt, black pepper, cumin, coriander, and turmeric. Stir well to combine.

Pour in the beef broth and bring the mixture to a boil.

In a small bowl, mix the masa harina with a little water to make a paste. Stir this into the stew to thicken it.

Reduce the heat and simmer the Indio Viejo for about 30 minutes, or until it's thick and flavorful.

Serve the Indio Viejo hot, garnished with chopped cilantro. It can be served with rice or tortillas, if desired.
