1 kg. Chicken, Cut Into Pieces
1½ l. Water
2 Onions, Chopped
3 Garlic Cloves, Minced
Salt And Black Pepper To Taste
2 Large Yuca Roots, Peeled And Chopped
2 Large Potatoes, Peeled And Chopped
2 Corn On The Cob, Cut Into Rounds
1 Fresh Cilantro, Chopped

In a large pot, combine the chicken, water, onions, garlic, salt, and black pepper. Bring to a boil, then reduce the heat and simmer until the chicken is cooked through.

Add the yuca, potatoes, and corn to the pot. Continue to simmer until the vegetables are tender.

Stir in the cilantro and cook for a few more minutes.

Serve the Sancocho hot, with extra cilantro for garnish if desired.
