Method

500 g. Black Beans
1 kg. Pork, Variety of Cuts
1 Onion, Chopped
4 Garlic Cloves, Minced
2 Bay Leaves
¼ tsp. Salt to Taste
Water, to Cover

Soak the black beans overnight.

In a large pot, sauté the onions and garlic until fragrant.

Add the pork and cook until browned on all sides.

Add the soaked beans, bay leaves, and enough water to cover the ingredients.

Bring the mixture to a boil, then reduce to a simmer and cook for 2-3 hours, or until the beans are tender and the flavors meld together.

Season with salt to taste.

Serve with rice and collard greens, if desired.
