Moqueca (Brazil)

500 g. White Fish Fillets
200 g. Shrimp, Peeled and Deveined
2 Limes, Juiced
2 Garlic Cloves, Minced
Salt and Pepper to Taste
2 Onions, Sliced
1 Red Bell Pepper, Sliced
1 Green Bell Pepper, Sliced
400 ml. Coconut Milk
2 tbsp. Palm Oil
Fresh Cilantro, Chopped
Marinate the fish and shrimp in the lime juice, garlic, salt, and pepper for 30 minutes.
In a large pot, sauté the onions and bell peppers in the palm oil until softened.
Add the coconut milk and bring to a simmer.
Add the marinated fish and shrimp, cover, and cook for about 15 minutes, or until the seafood is cooked through.
Garnish with fresh cilantro before serving.
