Lomo Saltado (Peru)

500 g Beef Tenderloin, Cut into Strips
              ½ tsp Salt to Taste and Pepper
              2 tbsp Vegetable Oil
              2 Onions, Thickly Sliced
              2 Tomatoes, Cut into Wedges
              2 tbsp Soy Sauce
              2 tbsp Red Wine Vinegar
              500 g Potatoes, Cut into Fries
              Chopped Fresh Parsley, for Garnish
          Season the beef with salt and pepper.
Heat the oil in a wok or large frying pan, add the beef and stir-fry until browned. Remove the beef from the pan and set aside.
In the same pan, add the onions and tomatoes, stir-fry until the onions are softened.
Return the beef to the pan, add the soy sauce and vinegar, and stir-fry for a couple more minutes.
In the meantime, fry the potatoes until golden and crisp.
To serve, mix the fries with the stir-fry or serve them on the side. Garnish with chopped parsley.
