1 kg. Yellow Potatoes
4 Limes, Juiced
2 Aji Amarillo Peppers, Seeded and Chopped
2 Chicken Breasts, Cooked and Shredded
1 Avocado, Sliced
200 g. Mayonnaise
¼ tsp. Salt to Taste
1 tbsp. Fresh Parsley, for Garnish

Boil the potatoes until soft, then drain and mash until smooth.

Mix the mashed potatoes with lime juice, aji amarillo, and salt.

In a separate bowl, mix the shredded chicken with mayonnaise.

In a mold, layer half the potato mixture, then a layer of chicken, a layer of avocado, and then the rest of the potatoes.

Press down gently to compact the layers.

Chill in the fridge for at least an hour before unmolding and slicing.

Garnish with fresh parsley before serving.
