Anticuchos (Peru)

500 g. Beef Heart, Cut into Cubes
4 Garlic Cloves, Minced
2 Aji Panca Peppers, Seeded and Ground
125 ml. Red Wine Vinegar
1 tsp. Ground Cumin
1 tsp. Dried Oregano
Salt to Taste and Pepper
Vegetable Oil, for Grilling

In a bowl, combine the garlic, aji panca, vinegar, cumin, oregano, salt, and pepper.

Add the beef heart and marinate for at least 2 hours, or overnight.

Preheat a grill to high heat.

Thread the beef heart onto skewers and grill, turning occasionally and basting with oil, until charred and cooked to your liking.

Serve the anticuchos with boiled potatoes and corn.
