Papas a la Huancaina (Peru)

8 Potatoes Boiled and Halved
200 g. Feta Cheese
1 Aji Amarillo Pepper, Seeded and Chopped
125 ml. Evaporated Milk
2 tbsp. Vegetable Oil
Salt to Taste
4 Lettuce Leaves
4 Hard-Boiled Eggs, Halved
12 Black Olives
Fresh Parsley, for Garnish

Blend the cheese, aji amarillo, evaporated milk, oil, and salt in a food processor until smooth.

Arrange the lettuce leaves on a platter and place the potatoes on top.

Pour the sauce over the potatoes.

Garnish with the hard-boiled eggs, olives, and fresh parsley.
