South American, Lite Bite Vegetarian Nut Free, Cheese. (Queso Blanco)

Method

Dough
300 g. All-purpose Flour
200 g. Unsalted Butter, cold and cut into small cubes
1 tsp. Salt
80 ml. Cold Water
1 Block of Queso Blanco (Soft White Cheese) Divided into 20 Sticks
1 Egg, Beaten
Vegetable Oil, for Frying
80 ml. Cold Water

In a large bowl, combine the flour and salt.

Add the cubed butter to the flour mixture. Using your fingers, mix until the mixture resembles coarse sand.

Gradually add the cold water, mixing until the dough begins to come together.

Turn the dough out onto a lightly floured surface and knead just until it forms a ball. Be careful not to overwork the dough.

Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.

After the dough has rested, roll it out into a thin sheet.

Assembly and Cooking

Cut the dough into strips and wrap around the cheese sticks, sealing the edge with beaten egg.

Heat the oil in a deep fryer or large saucepan.

Fry the tequeños until golden brown.

Drain on paper towels before serving.
