Llapingachos (Ecuador)

Method
1 kg. Potatoes, Boiled and Mashed
1 Onion, Chopped
200 g. Cheese, Grated
Salt to Taste and Pepper
Vegetable Oil, for Frying
In a bowl, combine the mashed potatoes, onion, cheese, salt, and pepper.
Shape the mixture into patties.
Heat the oil in a frying pan and fry the patties until golden brown on both sides.
Serve the llapingachos with aji or your favorite sauce.
