4 Silverside Fish (aka whitebait, smelt)
Salt to Taste and Pepper
125 g. Flour
Vegetable Oil, for Frying
1 Lemon, Cut into Wedges, for Serving
Season the fish with salt and pepper, then dredge in the flour.
Heat the oil in a frying pan and fry the fish until golden brown and crispy.
Drain the fish on paper towels and serve with lemon wedges.
