South American, Main Course Gluten Free Nut Free, Flank Steak

Chorrillana (Chile)

1 kg. Potatoes, Cut into Fries
500 g. Beef Strips
2 Onions, Sliced
4 Eggs
½ l. Vegetable Oil, for Frying
¼ tsp. Salt to Taste and Pepper

Heat the oil in a large pan or deep fryer and fry the potatoes until golden and crispy. Remove from the oil and drain on paper towels.

In the same oil, fry the beef strips and onions until cooked to your liking.

Push the meat and onions to one side of the pan and crack the eggs into the other side. Cook until the whites are set but the yolks are still runny.

Season everything with salt and pepper.

To serve, pile the fries on a platter, top with the meat, onions, and eggs, and dig in!
