Choclo con Queso (Ecuador)

Method

4 Ears of Corn
200 g. Fresh Cheese
⅛ tsp. Salt, to Taste

Boil the corn in salted water until it is tender.

Slice the cheese and place it on top of the hot corn so it begins to melt.

Serve the corn with cheese immediately, with extra salt on the side if desired.
