Tiradito (Peru)

500 g. Fresh White Fish, Sliced
4 Limes, Juiced
1 Red Chili, Chopped
Salt, to Taste
Fresh Cilantro, for Garnish

Arrange the fish slices on a platter.

In a small bowl, combine the lime juice, chili, and salt. Pour this mixture over the fish, making sure all the slices are well coated.

Let the fish marinate in the refrigerator for at least 10 minutes before serving, to let the acid from the lime juice "cook" it.

Garnish the tiradito with fresh cilantro before serving.
