Causa Rellena (Peru)

1 kg. Yellow Potatoes, Peeled
4 Limes, Juiced
2 Avocados, Sliced
200 g. Shrimp, Cooked and Chopped
100 g. Mayonnaise
Salt, to Taste
Fresh Cilantro, for Garnish
Boil the potatoes until they are tender. Mash them, then stir in the lime juice and salt.
In a separate bowl, combine the shrimp and mayonnaise.
Layer the mashed potatoes, avocado slices, and shrimp mixture in a dish, repeating the layers until all the ingredients are used up.
Chill the causa rellena in the refrigerator for at least an hour before serving. Garnish with fresh cilantro.
