Picada Colombiana (Colombia)

6 Mini Arepas
3 Colombian Chorizo Sausages, Sliced
200 g. Chicharron (Fried Pork Belly)
6 Small Boiled Potatoes
200 g. Yuca (Cassava), Peeled and Sliced
2 Plantains, Sliced
Vegetable Oil, for Frying
Salt, to Taste
Heat the vegetable oil in a large pan. Fry the arepas, chorizo slices, chicharron, yuca slices, and plantain slices until they are crispy and golden. You may need to do this in batches. Remove each item with a slotted spoon and drain on paper towels.
In the same oil, fry the boiled potatoes until they are crispy.
Arrange all the fried items on a large platter. Sprinkle them with a bit of salt before serving. The picada colombiana is meant to be shared, so enjoy it with friends or family.
