Fritada (Ecuador)

1 kg Pork, Cut into Pieces
1 Onion, Chopped
3 Garlic Cloves, Minced
1 tsp Ground Cumin
1 tsp Paprika
¼ tsp Salt, to Taste
2 tbsp Vegetable Oil
Season the pork pieces with the cumin, paprika, and salt.
Heat the oil in a large pan, then add the onion and garlic. Sauté until they are soft.
Add the pork to the pan. Cook over medium heat until the pork is browned and crispy. The fritada is done when the meat is tender and most of the fat has rendered out.
Serve the fritada with your choice of side dishes, such as rice or plantains.
