Surullitos (Puerto Rico)

250 g. Cornmeal
1 tbsp. Sugar
Salt, to Taste
200 g. Cheddar Cheese, Grated
Vegetable Oil, for Frying

In a large bowl, combine the cornmeal, sugar, and salt. Add enough water to form a stiff dough.

Divide the dough into pieces and roll each one into a finger-shaped cylinder. Press a bit of the grated cheese into the center of each cylinder, then roll the dough around the cheese to seal it in.

Heat the oil in a frying pan. Fry the surullitos until they are golden brown and crispy.

Drain the surullitos on paper towels before serving them hot.
